Why Is Salt Added?
Why do processed foods contain so much salt? Well sodium chloride, commonly called salt has a number of functions in food products. For instance, salt helps prevent spoiling by inhibiting the growth of bacteria, yeast and mould; it decreases the perception of dryness in foods such as crackers and pretzels; helps disguise metallic or chemical aftertastes in products such as soft drinks; and it brings out the flavours in food.
But must processed foods contain so much salt? Many food and nutrition experts think it's not necessary to add large amounts of salt to processed food products. Many countries around the world are processing legislation to reduce the salt content of foodstuffs and this has also recently been mentioned by the South African Health Minister.
