So What Is Quinoa? (pronounced KEEN-wah)

Often thought to be a grain, quinoa is actually a seed. It is an ancient crop that has its origins in South America, where it was referred to as the ‘mother of all grains’ by the Incas.

Quinoa is packed with magnesium, phosphorus and manganese, and is rich in amino acids. It has a light, fluffy, slightly crunchy texture when cooked and a mild, somewhat nutty flavour. It's also gluten-free, making it an excellent wheat replacement in people with coeliac's disease.

This protein-rich carbohydrate, is versatile and can be combined with most other foods and cooking quinoa is easy and quick. Cooking instructions are usually on the label. It takes about 14 to18 minutes over a low heat and is cooked when the germ separates from the seed. The cooked germ looks like a tiny curl and should have a slight bite to it (like al dente pasta).

Try This Yummy Quinoa Salad

Cook the quinoa according to packet instructions and let it cool. Combine with chickpeas, red and yellow sweet peppers, sunflower seeds and fresh herbs. Dress with a mixture of lime juice, olive oil and Dijon mustard and serve.
