To Buy: Omega-3 Brown Rolls + NoMu Stir Tomato & Chilli Pesto Mix
What You Need
2 Omega-3 Brown Rolls
½ tsp olive oil
Sea salt flakes and freshly ground black pepper
NoMu Stir Tomato & Chilli Pesto Mix
2 small handfuls wild rocket
1 tomato, sliced
1/ Split the rolls and toast the insides. Reconstitute the pesto according to package instructions.
2/ Spread one half of each roll with some of the pesto.
3/ Lightly whisk the eggs with a splash of water.
4/ Heat the olive oil in a pan over medium-high heat.
5/ Add the eggs, allow to cook slightly around the edges, then drag the mixture towards the centre, allowing uncooked egg to flow into the gap. Season well. Do this a few times until the omelette is almost set, then remove from the heat and flip over the omelette.
6/ Slip the folded omelette onto a board and cut into two triangular-shaped halves.
7/ Place a piece of omelette on each roll, top with wild rocket and tomato slices and serve.
