Try these fragrant Rooibos-and-spice steamed pears. They have zero fat and make for a wonderful winter dessert.
What You Need
1 tbsp organic Rooibos tea leaves
100g demerara sugar
4 forelle or bosc pears, peeled, halved and cored
1 slice ginger
2 cinnamon quills
1 star anise
In a large bowl steep the Rooibos tea leaves in a litre of freshly boiled water for five minutes. Place the sugar, ginger, cinnamon and star anise in a pot that can take a bamboo steamer fitted snugly on top. Place the pears on the steamer. Strain the Rooibos tea over the pears and into the pot. Bring the Rooibos liquid to the boil and then reduce the heat to a simmer. Steam the pears for 20 minutes or until tender. Serve the pears warm with Greek-style yoghurt and raw honey or reduce the poaching liquid to be more syrupy and serve with the pears.
Cook’s note: If you don’t own a steamer, poach the pears in the Rooibos liquid.
