Linguine with Caviar and Asparagus

Ingredients
1 tsp salt
250g linguine
1 tbsp butter
1/3 cup reduced fat cream
100g fine asparagus spears, cut into 2cm pieces
Salt and pepper to taste
100g Norwegian smoked salmon ribbons, torn into pieces
2 tbsp caviar
15g fennel, chopped

Method
Bring a large saucepan of water to the boil and add a teaspoon of salt. Add the linguine and cook according to the packet instructions, or until al dente. Meanwhile, heat the butter, cream and asparagus in a nonstick saucepan. Season with salt and freshly cracked black pepper, to taste. Bring to a simmer and remove from the heat. Stir in the salmon and cook for five minutes. Add the caviar and fennel. Drain the pasta in a colander. Tip the pasta into a bowl, add the sauce, toss lightly and serve immediately. Delicious served with a glass of chilled white wine and a few slices of warm ciabatta.
