How To Joint A Chicken
Jointing a whole chicken (rather than buying chicken pieces) will give you elegant, relatively boneless chicken pieces that cook more quickly, look good and are easier to eat. It eliminates those odd bones in the thigh sections, allows for trimming the drumsticks, and makes it easy to remove the skin from breast meat, thigh and drumstick if you prefer. Step 1
Place the whole chicken on a clean board – laying a tea towel under the board will keep it steady. Using a sharp knife, cut into the skin between the drumstick and the rest of the carcass.
