Turkey Tacos
Salsa:
1 cup pineapple, finely diced
40ml red onion, minced
1-2 small red chillies, seeded and finely chopped
1 heaped tsp sea salt flakes
2 heaped tsp sugar
120ml fresh lime juice
To serve:
12 tacos
Baby gem lettuce, finely sliced
Coriander
240g leftover turkey, shredded
Greek yoghurt (optional)
Method
1/ Preheat the oven on the grill setting. Mix the salsa ingredients together and set aside.
2/ Grill the tacos for a minute or two, turning once, until hot, crisp and lightly browned.
3/ Divide the turkey between the tacos, spoon over some salsa, add the lettuce, coriander and yoghurt, and serve. Or, lay out the components and let everyone help themselves.
