Make Nougat This Christmas

Prep time: 25 minutes
What You Need
300g sugar
125g water
330g glucose syrup
30g egg whites
30g glucose syrup
60g milk powder
150g Lindt White Chocolate
400g dried cranberries
Method
Melt the chocolate and set aside. Cook the first batch of glucose, sugar and water to 127 degrees Celsius. Make sure to stir the sugar granules just until they are dissolved then don't mix again. At 122 degrees start to whisk the whites and glucose on full volume in preparation for sugar syrup. Pour the syrup onto the whites while whisking on full. Add milk powder and melted white chocolate. Then add cranberries. Roll mixture out onto a tray and flatten with two boards on either side. Leave overnight. Place rice paper on each side of mixture and then slice into rectangles. And voilà!
