The fuzzy fruit packs a serious dose of vitamin C, a supercharged antioxidant that benefits your eyes and immune system. Plus, certain compounds in peaches may help to halt the spread of breast-cancer cells, according to US research. And, while they’re sweet enough to be dessert stars, peaches also marry well with savoury ingredients, making them ideal for braai marinades and chilled soups, especially when grilled first to caramelise their sugars.

What You Need
3 ripe peaches, sliced into thin wedges
3 cups rocket
110g fresh mozzarella, cut into 2.5cm cubes
2 tbsp chopped walnuts or pecans
3 tbsp extra-virgin olive oil
2 tbsp white wine vinegar
1 cup fresh basil
¼ tsp salt

Method
1/ In a large bowl, toss together peaches, rocket, mozzarella and nuts.
2/ Put oil, vinegar, basil and salt in a blender or food processor and combine until smooth.
3/ Divide peach salad among serving plates and drizzle with basil oil.

Serves 4. Per serving: 1000kJ, 20g fat (6g sat), 10g carbs, 280mg sodium, 2g fibre, 9g protein.
