Sticky Lemon Chicken With Rice

This scrumptious home-cooked meal is also low in kilojoules.

Ingredients
4 x 150g chicken breast fillets (with skin)
1 large lemon
2 tsp fresh thyme leaves
1½ tbsp honey
Method
Lightly coat a shallow, ovenproof dish with olive oil spray and preheat
the grill to high.
Put the chicken in the dish, skin-side down, and season with salt and pepper. Grill for five minutes. While the chicken is grilling, cut four thin slices of lemon.
Turn the chicken fillets over and place a slice of lemon on top of each. Sprinkle over the thyme and drizzle with honey. Squeeze over the juice from the remaining lemon and spoon over two tablespoons of water.
Return to the grill for 10 more minutes, until the chicken is golden and cooked all the way through. Serve the chicken and the sticky juices with one cup of steamed brown rice.
Serves 4. Per serving: 1560kJ, 33g protein, 40g carbohydrates, 4g fat (1g sat), 2.5g fibre, 332mg sodium.










I was just wondering if I could try this with chicken fillets (no SKIN) or would it not have the same effect? this sounds Really GOOD! Yum!
It would work fine with out the skin, you could also do a risotto cup, one could be a little more adventurous with the seasoning of the chicken, or even do an egg fried soy sauce rice which would go great with the honey component.
This recipe sounds very good but can the honey be substituted as we have an allergy to honey.
