A traditional Cape recipe (that makes a great alternative to creamy snoek pâté) using smoked snoek and served with moskonfyt – a tart syrup made from fermented grapes.
What You Need
1 cup oak-smoked snoek
1 small shallot, finely chopped
1 green chilli, seeded and finely chopped
¼ cup fresh lemon juice
¼ tsp sea salt flakes
To Serve
Moskonfyt
Cape seed loaf
Method
Flake the snoek, removing all bones. Toss with the shallot, chilli, lemon juice and salt. Spread on slices of seed loaf and drizzle with moskonfyt just before eating.
Serves 6. Per 99g serving: 334kJ, 0.5g fat (0g sat), 45mg sodium, 1g carbs, 0g fibre, 0g sugars, 16g protein.
