
While the combo might sound surprising, spanspek has a savoury undertone that works beautifully with tomato. Spoon this super refreshing chopped salad onto thin slices of toasted, garlic-rubbed baguette.
70g cucumber (½ a Mediterranean cucumber)
60g rosalini tomatoes
80g spanspek
1½ tsp apple cider vinegar
¼ tsp honey
1 tsp lime juice
1 tbsp grapeseed oil
1 tsp chives,
finely snipped
1 tsp mint leaves, finely sliced
Sea salt flakes and freshly ground black pepper
1/ Peel and deseed the cucumber, then dice.
2/ Chop the tomato and melon to the same dimensions as the cucumber.
3/ Toss the cucumber, tomato and melon with the remaining ingredients and refrigerate for one hour.
4/ Season with salt and pepper, then serve.
Serves 2.
