4 Easy And Accessible Egg Substitutes To Use When Baking

For one egg, substitute:
1. ¼ cup puréed fruit
Puréed unsweetened, cooked apples or banana are a perfect replacement for eggs in sponge cakes, cupcakes and muffins. If you don’t want to alter the flavour of your sweet treat, use puréed apple – it does nothing to the flavour, but it will give the cake an amazing brightness. Banana will impart it’s distinctive flavour and works particularly well when making eggless flapjacks.
2. 1 tbsp ground flaxseeds or chia seeds combined with 3 tbsp water
Each mixture will need to sit in the fridge for a few minutes, but you’ll know it’s ready when it has a similar consistency to an egg yoke. Both chia seeds and flaxseeds are rich in omega 3 fatty acids, protein and fibre, which is a cool added healthy perk. Tip: use your clean coffee grinder to make powered flaxseeds and chia seeds.
3. ¼ cup puréed silken tofu
If you’re looking for a protein, iron and calcium kick with eight essential amino acids, tofu is your go-to ingredient. It will also add moisture to your baking, so it’s good to use when making brownies. Bonus: according to a study published in the journal Hormones and Behavior, eating tofu may even improve your sex life!
4. ¼ cup coconut yoghurt
