Easy Bobotie Recipe

A traditional South African dish, bobotie is the epitome of comfort food. Serve it with a fresh garden salad instead of rice for a healthier meal. Also, if you’re reheating bobotie the next day, make sure you cover it with foil so it does not dry out.

What You Need

1 piece of Sasko Plus+ Low-GI bread
250ml milk
2 tbsp extra-virgin olive oil
2 small onions, chopped
2 tbsp garlic-and-ginger paste
½ tsp salt
1tbsp xylitol or Canderel
1 tsp turmeric
1 tbsp curry powder
1 tbsp garam masala
500g extra-lean mince (or ostrich mince)
1 tbsp tomato paste
2 tbsp chutney (or apricot jam)
1 tbsp white vinegar
¼ cup raisins (optional)
2 extra-large free-range eggs
3 bay leaves

Method

1/ Preheat oven to 180°C.
2/ Pour the milk into a bowl and put the piece of bread into the milk to soak.
3/ Put a large saucepan over a medium heat.
4/ Drizzle in oil and fry the onions until translucent (about 5 minutes).
5/ Add the garlic-and-ginger paste, salt, sugar and all of the spices and fry for a minute, until fragrant.
6/ Add the mince and fry until browned.
7/ Squeeze excess milk from the bread. Set aside leftover milk for later.
8/ Break bread apart and add to the mince along with the tomato paste, chutney, vinegar and raisins. Simmer for 15 minutes to reduce.
9/ Remove from the stove and transfer to a small ovenproof dish.
10/ Stir together remaining milk and eggs and pour over the mince.
11/ Top with Bay leaves and bake in the oven for 30 minutes, until the topping is set and just browned. Serve hot.
