When I’m looking for supper ideas, most of the time (even under lockdown, when time is less of an issue) I’m looking for three important factors: quick, easy, delicious. And this butternut tart recipe is all three. The only important thing to remember is to take out the puff pastry so that it has time to defrost!

This butternut tart is great for lunch or supper when served with a salad on the side or, if you’re hosting people (one day in the future, we hope!!), you can make small individual tarts in a muffin tray or some ramekins. You don’t need to change anything except cut out smaller rounds of pastry.

Of course, you can also change up the filling. Pumpkin is an obvious swap if you can’t get any butternut. And I love it with halved cherry tomatoes and basil leaves (place the fresh tomatoes on the onions and some chopped basil on the tomatoes and season with salt and pepper). You can also add feta (vegan or otherwise), if you want an extra salty kick. And if you don’t want to use fresh basil, you can add dollops of basil pesto.
