Flank Steak With Chilli-Lime Sauce

Lime juice can spice up any meal and is packed with antioxidants. Try this healthy and zesty flank steak with chilli-lime sauce!

What You Need
6 tbsp olive oil, divided
1/4 cup low-sodium soy sauce
3 tbsp lime juice, divided
570g flank steak
1 cup parsley
1/4 cup coriander
2 cloves garlic
1 jalapeño, smoked and marinated in a dash each of soy sauce, vinegar and tomato sauce
1 tsp lime zest

Method
1/ In a shallow dish, whisk together three tablespoons olive oil, the soy sauce and two tablespoons lime juice. Add steak, cover, and refrigerate for at least two hours, flipping midway through.
2/ In a food processor, combine parsley, coriander, garlic, the jalapeño pepper, lime zest, two tablespoons oil and one tablespoon lime juice. Process until well combined. 3/ Heat one tablespoon oil in a grill pan over medium-high heat. Cook the steak, turning once, until the internal
temperature reaches 65°C (about eight to 10 minutes for medium rare). 4/ Let steak rest 10 minutes before slicing. Serve with sauce.
