Brunch, Baby

Ingredients: 

— 1 Tbsp tomato salsa
— Baby spinach leaves
— 1 Egg
— Olive oil
— 8 Baby tomatoes, sliced
— 1/2 Jalapeño, sliced
— 1 Spring onion, sliced

Method:

1/ Spreading the salsa evenly on the taco. Cover with baby spinach.
2/ Fry the egg in a little olive oil until just cooked, then place on top of the spinach. Top with the rest of the ingredients and serve.

Chicken Lickin

Ingredients:

— 1/2 Handful shredded lettuce
— 1/2 Avocado, sliced
— 1/2 Cooked chicken breast, sliced or leftover roast chicken
— 4 to 5 Thin red or orange pepper slices
— 1 Spring onion, sliced
— Basil leaves
— A drizzle of Sriracha sauce

Method:

1/ Starting with the lettuce, layer the rest of the toppings onto the taco in the order above, ending with a generous drizzle of Sriracha.

Medi Twist

Ingredients:

— 1 Tbsp hummus
— Leftover roast veggies
— Red pepper slices
— Yellow pepper slices
— A couple of slices red onion

Method:

1/ Spread the hummus over the taco.
2/ Layer the veggies, peppers and red onion on top and serve.

Cabbage of Honour

Ingredients:

— 1 Tbsp salsa
— 1/2 Handful shredded purple cabbage
— 1/2 Handful shredded green cabbage
— 1 Jalapeño, sliced
— 1/8 avocado, sliced
— Corriander leaves
— 1/2 tsp Sesame seeds
— Fresh line juice

Method:

1/ Spread salsa on the taco
2/ Top with cabbage followed by the rest of the ingredients and finish with a squeeze of lime juice.

Bean There

Ingredients:

— 1 Tbsp salsa
— 1 Tbsp tinned kidney beans
— 1 Tbsp tinned black beans
— 1 Tbsp corm
— 1 Jalapeño, chopped
— 3 Baby tomatoes, sliced
— Fresh lime juice

Method:

1/ Spread salsa on the taco.
2/ Top with beans followed by the rest of the ingredients and a squeeze of lime juice.

Get a Shroom

Ingredients:

— Handful of mushrooms, sliced
— Red or yellow pepper slices
— Olive oil
— 1 Tbsp salsa
— 1/2 Handful shredded lettuce
— 1/8 Avocado, sliced
— 1 to 3 Peppadews, halved

Method:

1/ Sauté the mushrooms and peppers in a little olive oil until cooked.
2/ Spread salsa on the taco.
3/ Top with lettuce, cooked veggies, avo and Peppadews.

Holy Guacamole

Ingredients:

— 1/4 Avocado, mushed
— 1/2 Clove garlic, very finely chopped
— Fresh lime juice
— Salt and freshly ground black pepper
— 3 Slices red onion
— Sliced red pepper
— Sliced yellow pepper
— Fresh coriander

Method:

1/ Start by mixing the avocado, garlic, lime and seasoning together to make a basic guacamole. Spread it over the taco.
2/ Top with the rest of the ingredients.

Cheeky Chicken

Ingredients:

— 1/4 Avocado, mashed
— 1/2 Clove garlic, very finely chopped
— Fresh lime juice
— Salt and freshly ground black pepper
— 1 Sliced jalapeño
— A couple slices red onion
— 1/4 Cooked chicken breast or leftover roast chicken
— 1 Tbsp black beans
— Handful shredded purple cabbage

Method:

1/ Mix the avocado, garlic, lime and seasoning together to make guacamole. Spread it on the taco.
2/ Top with the rest of the ingredients.

Big Fish

Ingredients:

— 1/4 Avocado, cubed
— 50g to 70g Raw salmon, cubed
— 1 Spring onion
— Fresh lime juice
— 1/2 tsp Sesame seeds
— Fresh Coriander
— Salt and freshly ground black pepper

Method:

1/ Place all the ingredients in a bowl and stir to combine until everything is well covered with lime juice.
2/ Scoop onto the taco and add some extra coriander and lime, if desired.

Ingredients:

— 1 Tbsp chocolate almond nut butter
— 1/2 a Banana, sliced
— 3 to 4 Strawberries, sliced
— A sprinkle of almond slivers

Method:

1/ Spread the nut butter onto the taco.
2/ Top with banana slices, then strawberry and finally the almond slivers.
