Get Your Five-A-Day With This One Vegetable Soup Recipe (Well, Almost!)
The best thing about winter is that you have every excuse to eat soup all day, every day. The weather is practically begging you to, which is fine because is there anything more comforting, more wholesome and more healthy than a good, old vegetable soup? I don’t think so.
My favourite recipe to make at the moment is a chunky veggie version. This soup is particularly hearty, but if you want to bulk up its filling effect, you can add some noodles (I’ve added two-minute noodles just before serving – delish!). Use your favourite stock, and if you’re inspired to add even more veggies, you can! This recipe is totally versatile. Enjoy!
